Supa cu Galuste

I’m going to make this easy. No story to tell. This is just my recipe to make the Romanian equivalent to America’s chicken noodle soup when you need a warm, healthy, brothy soup.

MAKE A STOCK OR BROTH

  • Chicken (preferably with bones)
  • A whole onion
  • 3-4 garlic cloves
  • 1-2 stalks of celery
  • a whole pepper, cut in half and de-seeded
  • a large carrot or two
  • Vegeta to taste (or salt and pepper)

I bring it all to a boil and then let it simmer for about 3-4 hours.

When I’m coming to the 4th hour, I start making the:

GALUSTE

  • 9 tbsp of Cream of Wheat
  • 2 large eggs

Whisk the eggs and slowly add the Cream of Wheat. Let it sit for about 10 min. The consistency needs to be thick enough that a fork leaves visible marks when dragged through. If it’s too thin, it will just break up in the hot soup.

After those 10 min, take some of the mixture onto the edge of a spoon (taking up about half the spoon) and carefully put into the broth/stock (or drop it). Let it simmer for a few minutes, covered, until poofy and easy to poke through with a fork.
